Feeling Peachy!!!

Feeling Peachy - - - who wouldn't be feeling peachy on such a beautiful day - - - and just one day until the start of the new East Goshen Farmers' Market in East Goshen Park located on Paoli Pike just west of Route 352. Our hours are 3 - 7 PM, every Thursday.

These gorgeous peach photos were sent to us from Josh Smith of Frecon Orchards - YUM! Josh and friends are busy in the orchard picking the first peaches of the season and packing them up to bring to our market tomorrow!
Nothing says summer has arrived like a fresh peach - dripping with juicy goodness. And just for you, I'm sharing my 90 year old mother's famous Peach Pie Recipe - hope you enjoy!
Leah's Peach Pie

Ingredients
Filling
6 - 8 peaches, peeled and sliced
1 cup sugar
2 - 3 tablespoons granulated tapioca
2 farm fresh eggs, well beaten

Crumbs
1 cup flour
1/2 cup sugar

1/4 cup unsalted butter
1 - 9 inch pie shell, homemade is the best

Preheat oven to 425 degrees. 
Combine all of the filling ingredients, stirring gently to combine. Pour into the prepared pie shell. Combine the crumb ingredients and mix with your hands to a crumb texture. Top the pie with the crumbs. Bake for 15 minutes at 425 degrees; then reduce the oven temperature to 375 degrees and bake for an additional 25 minutes. Enjoy!
