What's the Buzzzzzzzzzzzz!?!

Honey - golden, sweet honey - - - from Carmen B's Honey. Meet Karen Battavio, wife of bee tender Carmen Battavio - and East Goshen residents.
Karen is on hand every other week at the market to sell Battavio's honey - she has created a beautiful stand
 
complete with flowers to entice the bees to make more honey.
This week Karen is sharing 2 recipes with us to feature their honey. Both of these recipes are picnic perfect!!!

Bees in the Garden Coleslaw
Makes 8 - 10 servings
1 head green cabbage, shredded
1 green bell pepper, diced
1/2 cup sweet red bell pepper, diced
1/2 cup mayonnaise
1/3 cup honey - Battavio's, of course!
2 Tablespoons vinegar
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon celery seed
1/4 teaspoon black pepper

Toss the cabbage and peppers in a large bowl. To make the dressing, combine the remaining ingredients in a medium and mix thoroughly. Toss the dressing with the cabbage and peppers, mix well. Cover and refrigerate until chilled thoroughly. Recipe from www.honey.com

Honey Beets

1 tablespoon cornstarch
1/2 teaspoon salt
1 tablespoon beet juice (or water)
2 tablespoons cider vinegar
1/4 cup honey - Battavio's!!!
1 tablespoon butter
2 cups cooked, sliced beets

In a small glass bowl or measuring cup, mix cornstarch and salt. Stir in beet juice (or water). Microwave in high heat for 15 seconds or until thickened, stirring occassionally. Add vinegar, honey, and butter, mix thoroughly.
Place beets in a 1 1/2 quart casserole. Pour sauce over beets. Cover and heat on high for 1 - 2 minutes or until heated through. Do not uncover; let stand for 10 minutes. Reheat 1 minute on high before serving. (from www.cooks.com)
